Ingredients Needed

  • 1 Tbsp. olive oil
  • 1 ½ pound ground elk
  • ½  white onion, diced
  • 1 yellow pepper, diced
  • 1 red pepper, diced
  • 1 15 oz. can tomato sauce
  • 1 can fire-roasted diced tomatoes
  • 2 cups chicken broth
  • ½ tsp. garlic powder
  • ½  tsp. salt
  • ¼  tsp. Pepper
  • Cooked Jasmine rice or cauliflower rice
  • Chopped parsley for garnish

How to Make Elk Unstuffed Peppers

1. Heat the olive oil in a large, deep skillet over medium heat. Add in diced onion and pepper. Sauté for a few minutes until softened. Then, add in the ground elk and cook thoroughly.

2. Next, add in the diced tomatoes, tomato sauce, chicken broth, garlic powder, salt and pepper. Bring to a boil and then reduce to low and simmer. Cover with lid and simmer for approximately 20 minutes.

3. While the sauce is simmering, make your rice according to package directions. 

4. Once the pepper mixture is ready, serve in a bowl with the cooked rice. Garnish with chopped parsley.
